Mum's French Toast

In my mind, there is nothing worse than soggy bread.

Im am quite particular on the standard of my French Toast, it cannot be too dry or even worse soggy. I refused to even try French Toast until I had matured enough just last year to put my fear aside and try this 'soggy French bread'. To my amazement and pure joy, the picture i had in my mind of this soggy french bread was not a reality. I cannot thank my Mum enough for this delicious yet simple recipe! Thank you Mum <3

This batter will coat around 4 slices of bread. Serve with berries (I didn't use this time but with strawberries it is delicious!)

1 Egg
Splash of milk
Splash of vanilla essence
1 tbsp sugar

-whisk all ingredients together
-using brioche or any white bread you have leftover dip into the mixture on both sides, making sure to not leave it soaking too long.
-melt butter or margarine in a frying pan, the more you add the crispier the edges will be
-cook until edges bread is a golden toasted colour
-serve with maple or golden syrup and a sprinkle of icing sugar
