Vanilla Fairy Cakes

One of my favourite things to make using my KitchenAid is Vanilla Fairy Cakes. Its a super easy recipe, just throw all of the the ingredients into the bowl and turn it on. Preheat oven to 170C and bake for 15-20mins or until golden on top. The batter will make around 9 cupcakes. Icing with any icing of your choice, I most often use a simple icing of confectioners sugar, a little milk and butter. The cupcakes in the below picture were beautifully decorated by 3 yr old Haya, I think she did a perfect job! 


1/2 cup unsalted butter, softened
7 tbsp sugar
2 large eggs
3/4 cup self raising flour
1/2 tsp vanilla extract
2 tbsp milk
