Coconut Macaroons

Coconut Macaroons simple baking using desiccated coconut and condensed milk.
They say "Nothing says home like the smell of baking", this couldn't be more true than with the smell of these cloud like coconut treats. Everyone should be able to have a 'homely' smelling home and this recipe is easy enough for even the least experienced home cook!

  • 395g sweetened condensed milk
  • 350g desiccated coconut 
  • 2 large egg whites
  • 1 tbsp caster sugar
  • 1 tbsp vanilla extract
  1. Preheat the oven to 160C (lower if using a fan assisted oven). Line two baking sheets with baking paper. 
  2. In a large bowl, combine the coconut and condensed milk.
  3. In a separate bowl, whisk the egg whites until stiff peaks form, add the sugar slowly.
  4. Fold the egg whites into the coconut mixture.
  5. Use an ice-cream scoop to divide macaroon mixture. Press slightly to condense mixture before turning out onto tray. 
  6. Bake for 15-20 minutes. Keep an eye on your macaroons as they can brown very quickly, depending on your oven!
NOTE: If you fancy, you can dip the base of the macaroons in chocolate and dry upside down. I used a white chocolate candy coating which worked really well. Milk or dark chocolate would also work really well, especially if you like Bounty chocolate bars!
