Melting Moments

Melting Moments; these were my favourites to buy from the ladies at the CWA shop when I was growing up. I tired the following recipe from an Australian's Women's Weekly cookbook and although they aren't as perfect as those ones from my childhood, they're still pretty darn delicious!

  • 250g butter, softened
  • 1 tsp vanilla extract
  • 1/2 C icing sugar
  • 1 1/2 C plain flour
  • 1/2 C cornflour
  • 90g butter
  • 3/4 cup icing sugar
  • 1 tsp finely grated lemon rind
  • 1 tsp lemon juice

  1. Preheat oven to 160C/325F. Line baking trays with baking paper.
  2. Beat butter, vanilla and sifted icing sugar in a bowl with an exletric mixer or freestanding mixer until light and fluffy. Stir in sifted flours in two batches.
  3. With floured hands, roll rounded teaspoons of mixture into balls; place about 2.5cm apart on trays. Flatten slightly with a floured fork. 
  4. Bake cookies for about 15 mins (don't let them brown). Stand for 5 minutes before lifting them onto a wire rack to cool completely. 
  5. Make buttercream - beat the butter and icing sugar together until pale and fluffy. Add the lemon ring and juice, mix to combine. 
  6. Sandwich biscuits together with buttercream. Dust with icing sugar before serving.
